Easy fried rice with asparagus tips and drizzled in sauce with coconut is a delicious vegan dish. I love adding chopped apples as well for a refreshing crunch. You will adore these flavor combinations.

Another fun and unique flavor I use in easy fried rice is wasabi. Wasabi is simply Japanese horseradish made from a mustard type plant. A paste is made from the ground rhizomes of the plant which is pungent and tastes similar to hot mustard.

Other ingredients for the easy fried rice and sauce with coconut include cup white rice, water, vegetable oil, and chopped apple pieces. Also white onion, asparagus tips, and soy sauce. Soy sauce contains a lot of salt already that’s why I don’t add any to the rice recipe.

You want to cook the rice separately before adding it to a frying pan. Where you should have already sautéed the onions in oil, soy sauce, and wasabi. Mix the cooked rice around then add in the asparagus tips and apples.

Any sauce with coconut flavor has a lovey unique flavor.

In order to make sauce with coconut I use coconut yogurt. Coconut yogurt is made of ingredients such as real coconut, coconut milk, and coconut cream. It also usually contains something like rice starch. Additionally this sauce also contains flax meal to thicken, flavor, and nourish.

Flax meal is a healthy addition to easy fried rice. Flax meal is ground down flax seeds. Flax seed crops go all the way back to Ancient Egypt.

Sauce with coconut also uses orange juice, sugar, and salt. It’s super simple to throw the sauce together after cooking the easy fried rice. The first step is to combine the coconut yogurt and flax seed meal in a large mixing bowl. Stir them together before adding the orange juice, sugar, and salt.

Furthermore, if you enjoy the flavors of this sauce, try it out on other recipes like baked vegetables. It’s really good with butternut squash or baked pumpkin as well. Also coconut flax sauce is delicious with vegan lettuce wraps using tofu or beans! You can even heat it up in a pot and add some curry spice and vegetables for a lovely soup.

  • 1 cup coconut yogurt
  • 1/4 cup almond milk
  • 1 tbsp orange juice
  • 2 tbsp ground flax meal
  • 2 tbsp sugar
  • 1 tsp salt
  • Ingredients For The Apple Rice
  • 3/4 cup white rice (dry)
  • 1.5 cups water
  • 2 tbsp vegetable oil
  • 1 cup chopped apple pieces
  • 1/4 cup white onion
  • 1 cup asparagus tips
  • 2 tbsp soy sauce
  • 1 tsp wasabi paste

Instructions

Combine the yogurt and flax seed in a large mixing bowl and whisk until thoroughly combined

Then add the orange juice, sugar, and salt and whisk until thoroughly combined

Directions For The Apple Rice

Combine the rice and water in a pot

Cook on medium heat for 18-20 minutes while stirring occasionally

Combine the oil, soy sauce, and wasabi in a skillet and bring to a medium heat and stir them into a paste

Add the onions and sauté until they start to brown

Add the asparagus tips, cooked rice, and apples and stir

Cook with the lid on for 5 minutes while stirring occasionally
