I adore any vegetarian stir fry with fried eggs. The best part is breaking the yolk right before you eat it! Especially with this zesty sauce. Ingredients for this dish include coconut oil, garlic, green onions, and asparagus tips. I also love to add canned bamboo shoots, chopped potatoes, and some salt.

And what would this sautéed meal be without some sunny side up fried eggs on top? The spicy orange sauce is the perfect addition to add some extra flavor that really pops. Ingredients for the sauce melted coconut oil, minced shallots, and garlic. Seasonings include chilli paste, toasted sesame oil, rice vinegar, and orange juice.

This vegetarian dish is delicious and zesty.

To make the sauce you also need water, cornstarch, salt, dried chili flakes, and sugar. When making this vegetarian stir fry recipe it’s important to brown the garlic in the coconut oil first. Then add in the diced potatoes first because they take the longest to cook. Make sure to stir everything around a few times.

Next add in the chopped green onions, asparagus tips, and bamboo shoots.
Place the lid back on the pan and allow it to cook for five minutes. Stir the ingredients around then carefully crack open each egg on top, spread out from one another.

Place the lid back on the skillet and cook the vegetarian stir fry for another 6-8 minutes until eggs are funny cooked. While that dish is sautéing, make the spicy orange sauce. Again start by browning the garlic and shallots in coconut oil. Add in the remaining sauce ingredients according to the instructions below.

  • 2 tbsp coconut oil (melted)
  • 2 tablespoons shallots (peeled and minced)
  • 2 cloves garlic (peeled and minced)
  • 1 tsp chilli paste
  • 1 tbsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 3/4 cup orange juice
  • 1 cup water
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 tbsp dried chili flakes
  • 2 tbsp sugar
  • Ingredients For The Stir Fry
  • 2 tbsp coconut oil
  • 2 cloves garlic
  • 1/2 cup chopped green onions
  • 2 cups of asparagus tips
  • 1 cup bamboo shoots (canned in water)
  • 1 large potato (cut/chopped into small pieces)
  • 4 large eggs
  • 1/2 tbsp salt

Instructions

Directions For The Sauce

Brown the Shallots and garlic using the coconut oil in a sauce pan.

Add in the rice vinegar, water, and orange juice and stir - bring to a simmer.

Add in the sesame oil, salt, dried chili flakes, and sugar and whisk.

Simmer for another 6 minutes then add the cornstarch and whisk until thoroughly combined.

Remove heat and allow to cool off for 20 minutes to thicken.

Directions For The Stir Fry

Melt the coconut oil in a large skillet with the garlic and sauté until it starts to brown

Add in the diced potato pieces with your seasoning and place the lid on top and cook for about five minutes on medium heat

Add in the chopped green onions, asparagus tips, and bamboo shoots

Place the lid back on the pan and allow to cook for five minutes.
