Another thing I love about this stir fry with ginger sesame sauce is the variety of bright colors. The purple cauliflower and green onions are pleasant on the eyes! Purple cauliflower gets its color from something called anthocyanin. Anthocyanin is a naturally occurring phytochemical that is also found in other red, blue, or purple fruits and vegetables.

These type of vegetables go great in recipes with lentils like this one. All you need to make this stir fry are dry lentils, water, coconut oil, and green onions. I also love to add garlic, purple cauliflower, sprouts, enoki mushrooms, water chestnuts, and some salt.

I prefer to use fresh lentils because they cook relatively quickly anyway. However you can get pre cooked lentils in a can of you want. Anyways I start cooking this stir fry by cooking the lentils in a large frying pan. Once they are fully cooked I add in the coconut oil, garlic, and cauliflower.
Cover the pan with a lid and cook for 5 minutes.

The last ingredients to add into your recipe with lentils are green onions, mushrooms, sprouts, and water chestnuts. In the meantime make the ginger sesame sauce. Ingredients you need to include shallots, garlic, coconut oil, and water.

Also, orange juice, lemon juice, soy sauce, apple cider vinegar, and tahini. I also add sesame seeds, sugar, and corn starch into my ginger sesame sauce for the best flavor. In order to make the sauce I first cut down the garlic and shallots with coconut oil and a soft pan. Then I start adding in the other ingredients slowly while whisking but I save the corn starch for last.

  • 2 tbsp coconut oil
  • 1 clove garlic (peeled and minced)
  • 1 shallot (peeled and chopped)
  • 1/2 cup water
  • 1/2 cup orange juice
  • 1 tsp lemon juice
  • 2 tbsp soy sauce
  • 2 tbsp apple cider vinegar
  • 3 tbsp tahini (sesame paste)
  • 1 tbsp sesame seeds
  • 1 tbsp sugar
  • 1 tbsp corn starch
  • Ingredients For The Stir Fry
  • 1/2 cup lentils (dry)
  • 1 cup water
  • 1 tbsp coconut oil
  • 1/2 cup chopped green onions
  • 3 cloves garlic
  • 1 cup purple cauliflower (cut)
  • 1/2 cup sprouts
  • 3/4 cup enoki mushrooms
  • 1/2 cup water chestnuts (canned in water)
  • 1/2 tbsp salt

Instructions

Directions For The Sauce

Combine the oil, garlic, and shallots in a medium sauce pan and bring to a medium heat.

Cook for 3 to 5 minutes until it starts to brown then turn heat to medium low.

Add in the soy sauce and tahini and whisk

Next add in the water, orange juice, lemon juice, apple cider vinegar, sugar and whisk.

Cook for 5 minutes and remove heat

Add in the cornstarch and whisk vigorously until thoroughly combined

Allow to cool for 20 minutes to thicken

Start by combining the lentils, salt, and water in a large frying pan on medium high heat.

Allow the lentils to cook for 8 to 12 minutes while stirring occasionally.

Once the lentils absorb all the water turn heat down to medium low and add the coconut oil, garlic, and cauliflower.

Cover the pan with a lid and cook for 5 minutes.

Remove lid, stir, then add green onions, mushrooms, sprouts, and water chestnuts.

Cook for another 5 minutes then remove heat.
