Cooking pork chops is one of my favorite dishes because it creates a lovely aroma all throughout the house. The meat is tender, juicy, and delicious with a crispy pan sear. It’s the most delicious dish with this homemade pesto sauce recipe as well!

Any good pesto sauce recipe is going to be a healthy bright green color. Pesto originated in Genoa, the capital city of Liguria, Italy. It is now popular all over the world. This leafy based sauce is a combination of nuts or seeds with coarse salt, basil leaves, and hard cheese.

It’s a delicious flavor combination with meat. That’s why I make it when cooking pork chops. For this particular pesto I substituted cashews instead of pine nuts to give it an original and unique flavor.

This tasty pesto sauce recipe includes vegetable broth, orange juice, and toasted cashews. Also lemon juice, garlic, sea salt, and black pepper. I also love to use basil leaves, mint leaves, and spinach. Don’t forget to add the olive oil and parmesan cheese!

Cooking pork chops for dinner is simple and mouthwatering. All you need is 8 (6oz) boneless pork chops, olive oil, salt, and pepper. For this recipe I also like to add chopped red onions and basil in the pan.

Once you have all your ingredients ready, you can make the dish.

The first step when cooking pork chops is to turn the oven to 350 degrees F. Then bring a cast iron skillet to medium high heat with the oil in the pan. Place 4 pork chops in the pan at a time and sear each side for 5 minutes before add int onions and basil into the pan as well.

The next step is to move them into the oven to bake for 15 minutes. In the mean time you can make the pesto sauce recipe. First you want to combine the cashews, garlic, and vegetable broth in a food processor and blend.

Next add in the orange juice, lemon juice, and olive oil and blend again before adding in the basil, mint, and spinach leaves. Blend the leaves into the mixture on high speed before finally combining the salt, pepper, and parmesan cheese and blend one last time until the sauce is evenly combined.

  • 1/2 cup vegetable broth
  • 1/2 cup orange juice
  • 1/2 cup toasted cashews
  • 2 tbsp lemon juice
  • 1 small garlic clove, peeled
  • 1 teaspoon sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 cup basil leaves
  • 1/4 cup mint leaves
  • 2/3 cup spinach
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup parmesan cheese
  • Ingredients For The Pork Chops
  • 8 (6oz) boneless pork chops
  • 2 tbsp olive oil
  • 1/2 tbsp salt
  • 1 tsp black pepper
  • 1/4 cup red onions
  • 1 tsp chopped basil

Use your food processor to combine the cashews, garlic, and vegetable broth and blend first

Then add the orange juice, lemon juice, and olive oil and blend again

Next add in basil, mint, and spinach leaves and blend until combined

Then add in the salt, pepper, and parmesan cheese and blend one last time

Preheat oven to 350 degrees F

Pat the meat down with paper towels to remove extra moisture

Sprinkle them with salt and pepper

Bring a cast iron skillet to a medium high heat before placing pork chops in the pan (4 at a time is good)

Sear the meat for 5 minutes per side then add the onions and basil into the pan as well and put the meat in the oven for 15 minutes
