This simple omelette with tomatoes and green onions tastes delicious with avocado cream sauce. Thick and fluffy eggs with fresh vegetables make breakfast tasty and nutritious. Additionally the sauce is savory and unique.

It’s so simple to make this omelette with tomatoes and green onions. All you need is a handful of fresh ingredients. The easy ingredients include large eggs, salt, pepper, and corn starch. You will also need chopped tomatoes and green onions.

Don’t forget some olive or vegetable oil to grease the frying pan! The ingredients needed for the avocado cream sauce include avocados, sour cream, minced garlic and lime juice. You will also need salt, pepper, and dried parsley.

The avocado cream sauce is mouthwatering!

I love making this omelette with tomatoes and chives because it’s really easy. First combine all the eggs in a large mixing bowl and whisk vigorously. Then add the salt and pepper and whisk again.

Next grease a medium frying pan and bring to a high heat. Pour approximately 1/2 of the egg mixture into the pan and reduce heat to medium. Then add in 1/2 portion of tomatoes and chives and cook for 3 minutes.

Fold the omelette with tomatoes in half and cook for another 3 minutes per side and move to a plate. This recipe makes 2 medium omelettes or 4 small omelettes. In order to make the avocado cream sauce just combine avocado, sour cream, and lime juice in a food processor. Blend the ingredients together until thoroughly combined.

Sprinkle the seasonings into the avocado cream sauce mixture and add the minced garlic. Blend again until thoroughly combined. Set the sauce in the refrigerator while making omelette with tomatoes and chives. This way it’s nice and chilled when served. Serve sauce on the side or drizzle it on top.

  • 1/2 tbsp salt
  • 2 tsp black pepper
  • 1 tbsp corn starch
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped green onions (chives)
  • 2 tbsp olive oil (to grease the frying pan)

  • 1/2 cup sour cream
  • 1 tbsp garlic (minced)
  • 4 tbsp fresh lime juice
