Anytime I am looking for a delicious plant based dish this is my go-to recipe. Sweet potato tacos with vegan peanut sauce are packed with flavor. The combination of sweet, salty, and savory are mouthwatering and fresh.

I love using red miso paste for the vegan peanut sauce recipe. The beans are fermented for at least one year and sometimes longer. This soy product is made of fermented soy beans and rice. It’s earthy and flavorful.

Red miso paste is delicious with sweet potato tacos because the flavors are meaty, salty, sour, and bitter. Other ingredients for the sauce include peanut butter, warm water, ginger, and soy sauce. I also use sugar, sesame seeds, orange juice, and rice vinegar.

Red miso paste adds a uniquely savory flavor to this dish.

The spice from the vegan peanut sauce comes from the chili powder and red chili flakes. Chili powder comes from the dried and ground up fruit of the chili pepper. Contrarily the chili flakes come from dried and crushed red chili cayenne peppers.

These flavors are so delicious with the sweet potato tacos which only require a few simple ingredients. All you need for the tacos is 8 mini corn tortillas, 4 medium to large sweet potatoes, vegetable oil, and some salt. I also add sesame seeds, shredded purple cabbage, lettuce, and carrots.

  • 1/3 cup peanut butter
  • 1/2 cup warm water
  • 1 tsp ginger
  • 1 tbsp sugar
  • 2 tbsp soy sauce
  • 1/2 tbsp red miso paste
  • 1 tsp sesame seeds
  • 1/4 cup orange juice
  • 1 tsp rice vinegar
  • 1 tsp chili powder
  • 1/2 tsp red chili flakes
  • Ingredients For The Tacos
  • 8 corn tortillas (mini tortillas)
  • 4 medium to large sweet potatoes
  • 2 tbsp vegetable oil
  • 1/2 tbsp salt
  • 1/2 tbsp sesame seeds
  • 1/2 cup shredded purple cabbage
  • 1/2 cup shredded lettuce
  • 1/4 cup shredded carrots

Instructions

Combine peanut butter, miso paste, ginger and soy sauce in a large mixing bowl and whisk vigorously until thoroughly combined

Slowly add in the warm water and whisk again

Add in the orange juice, vinegar, sugar, chili powder, and chili flakes and whisk until combined

Store in the refrigerator and serve chill

Directions For The Tacos

Skin the sweet potatoes and cut them into 1/2 inch chunks

Preheat the oven to 350 degrees F

Toss the sweet potato chunks in vegetable oil, salt, and sesame seeds

Spread them out in a baking sheet pan

Bake them for 20 minutes

Allow them to rest for 10 minutes then fill up the tortillas with them

Top with shredded vegetables
