  • 1.5s cup chicken broth
  • 2 tbsp butter
  • 2 tbsp lemon juice
  • 1 tbsp lime juice
  • 3/4 tbsp dried thyme leaves
  • 1/2 tbsp dried coriander spice
  • 1/2 tbsp allspice
  • 1/2 tbsp salt
  • 1 tbsp cornstarch
  • 2 tbsp brown sugar
  • 1/2 tbsp paprika
  • 1 tsp liquid smoke

  • 4 (6 oz) catfish fillets - skinless and boneless
  • 2 tbsp vegetable oil
  • 3 large eggs
  • 1 cup bread crumbs
  • 1 cup all purpose flour
  • 1 tbsp salt

  • 1/2 tbsp crushed black peppercorn

Instructions

Directions For The Sauce

Combine all the dry ingredients/ seasoning in a mixing bowl and mix them together (dried thyme leaves, dried coriander spice, allspice, salt, cornstarch, brown sugar, and paprika)

Melt the butter in a sauce pan on medium low heat

Whisk in the lemon and lime juice

Whisk in the dry seasoning mixture until it becomes like a paste

Slowly whisk in the chicken broth while whisking

Simmer on low heat for 5 minutes

Combine the bread crumbs, flour, salt, cornstarch and crushed peppercorn in a large mixing bowl and whisk thoroughly

Whisk the eggs in a separate bowl

Coat each catfish fillet completely in the eggs and then immediately toss in the breadcrumb mixture

Do this for each catfish fillet so they are all thoroughly coated in breading

Heat the oil in a large skillet on medium heat

Fry the catfish for approximately 4-5 minutes per side

Allow them to rest for 5 minutes
