My favorite type of croutons to use for baked breaded chicken is parmesan but you can use any flavor you prefer. The next step in the recipe directions is to preheat the oven to 350 degrees F. Next combine eggs, lemon juice, and buttermilk in a medium mixing bowl.

  • 3 large eggs
  • 1/4 cup buttermilk
  • 1 tsp lemon
  • 1 tbsp Sea salt
  • 1/2 cup all-purpose flour 
3 1/2 cups croutons
  • 2 tbsp vegetable oil (to grease the pan)
  • 6 chicken cutlets (about 1 1/2 pounds total)

Instructions

Start by preheating your oven to 350 degrees F (177 C•)

Then use a food processor to grind down the croutons into a chunky “flour” (so hey can be used as breading)

Combine eggs, lemon juice, and buttermilk in a medium mixing bowl and whisk until thoroughly combined

In a second mixing bowl combine four and sea salt and whisk together until thoroughly combined

Put the processed croutons in a third separate bowl

Grease your sheet pan (non stick 14 x 10 x 1 inches works great) with the oil

Take each chicken cutlet one at a time and roll completely in the flour, then the buttermilk/egg mixture, then in the crouton “flour”

Then lay on the sheet pan

Bake for 40 - 45 minutes then allow to rest for 15 minutes
