Lastly you will also need 2 tbsp vegetable oil to grease the pan. Most importantly, 6 chicken cutlets or about 1 1/2 pounds total. The first thing I like to do is put my croutons in my food processor then grind them into a “flour.”

Ingredients
- 3 large eggs
- 1/4 cup buttermilk
- 1 tsp lemon
- 1 tbsp Sea salt
- 1/2 cup all-purpose flour 3 1/2 cups croutons
- 2 tbsp vegetable oil (to grease the pan)
- 6 chicken cutlets (about 1 1/2 pounds total)
Instructions
Start by preheating your oven to 350 degrees F (177 C•)
Then use a food processor to grind down the croutons into a chunky “flour” (so hey can be used as breading)
Combine eggs, lemon juice, and buttermilk in a medium mixing bowl and whisk until thoroughly combined
In a second mixing bowl combine four and sea salt and whisk together until thoroughly combined
Put the processed croutons in a third separate bowl
Grease your sheet pan (non stick 14 x 10 x 1 inches works great) with the oil
Take each chicken cutlet one at a time and roll completely in the flour, then the buttermilk/egg mixture, then in the crouton “flour”
Then lay on the sheet pan
Bake for 40 - 45 minutes then allow to rest for 15 minutes
Drizzle with the Okonomi Sauce or serve on the side for dipping!
