The resulting curds are pressed into solid white blocks with varying degrees of firmness. Tofu scramble is rich in protein, calcium, and iron. Additionally it’s basically absent of carbohydrates making tofu perfect for low carb vegan diets.

The vegan dipping sauce is wonderful as well. It’s a lovely combination of sweet, savory, salty, and tangy. Ingredients for the sauce include water, vinegar, sugar, pineapple juice, and salt. Also corn starch, tomato paste, mango purée, and agave.

Next heat the oil using a large frying pan on medium high heat. Once the pan is hot you should add the seasoned tofu mixture to the pan as well.   • 1 cup Water
  • 1 tbsp Vinegar
  • 1 tbsp Sugar
  • 1/2 cup Pineapple juice
  • 1/2 tbsp Salt
  • 1 tbsp Corn starch
  • 1/4 cup Tomato paste
  • 1/4 cup Mango purée
  • 2 tbsp Agave
  • 1 tbsp minced Ginger
  • 1 tbsp Lemon juice
  • 1 tbsp Soy sauce
  • 1 tsp Black garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Turmeric
  • Ingredients For The Sandwich
  • 14 oz tofu extra firm
  • 1/4 cup vegan mayonnaise
  • 2 tbsp Chopped cilantro fresh
  • 1 tbsp Dried green onion
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Turmeric
  • 2 tbsp olive oil
  • 8 slices of bread

Instructions

Bring the water to a simmer in a sauce pan on medium heat

Reduce heat to medium low then add in minced ginger and agave and whisk

Then add in the vinegar, soy sauce, pineapple juice, tomato paste, lemon juice, and mango purée and whisk

Add in the salt, sugar, onion powder, and turmeric and whisk

Simmer for 5 minutes then remove heat

Add in the cornstarch and whisk

Allow to rest for 15 minutes

Chill in the refrigerator until ready to serve

Crumble up the tofu in a large mixing bowl and then add in the cilantro, dried onions, and seasoning

Use your hands to mix them all in

Heat the olive oil in a large frying pan or skillet

Once the pan is hot add the tofu mixture into the pan as well

Cook on medium heat for 10 minutes while stirring a few times

Remove heat and allow to cool off for about 15 minutes then add the vegan mayonnaise and mix it all together

Then evenly distribute between 4 slices of bread

Top with the other 4 slices of bread
