It’s super simple to make this stir fry as well. Start by sautéing the red onion in the coconut oil using a large frying pan. Then add in the butternut squash, broccoli, and the cauliflower. Season and stir well sautéing the ingredients on medium heat. Add in the mint leaves, put a lid on the pan, and cook for 12 minutes.

All you need in order to make this coconut mint sauce includes: coconut oil, coconut water, rice wine vinegar, sugar, salt, freshly chopped mint leaves. Coconut is such a wonderful flavor in the easy sauce recipe. In order to make it I start by melting the coconut oil in a sauce pan with freshly chopped mint leaves.

Stir it around while continuing to sauté on medium low heat. Next add in the coconut water and vinegar. Lastly stir in the sugar and salt whisk again and allow to simmer on medium low for five minutes. Allow the sauce to cool of for at least 10 minutes before serving.   • Ingredients For The Sauce
  • 3 tbsp coconut oil (melted)
  • 1 cup coconut water
  • 1 tbsp rice wine vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp freshly chopped mint leaves
  • Ingredients For The Stir Fry
  • 2 tbsp coconut oil
  • 1/4 cup red onions (chopped)
  • 2 cups butternut squash (cut into 1/2 inch cubes)
  • 1 cup broccoli pieces (fresh)
  • 1 cup cauliflower pieces (fresh)
  • 1 tsp salt
  • 2 mint leaves (fresh)

Directions For The Sauce

Combine coconut oil and chopped mint leaves in a small sauce pan and heat on medium low for five minutes while whisking.

Slowly add in the coconut water followed by the vinegar while whisking.

Lastly add in the sugar and salt whisk again and allow to simmer on medium low for five minutes.

Allow the sauce to rest for 10 minutes

Directions For The Stir Fry

Melt the coconut oil in a large frying pan on medium heat.

Add in the onions and stir them around for two or three minutes until they start to brown.

Add in the butternut squash pieces, broccoli, and cauliflower.

Sprinkle with salt mix around with a large spoon.

Add in a couple of mint leaves and put a lid on the pan.

Allow it to cook on medium heat for 12 minutes.
