I adore this recipe for spicy mayo drizzled on top of my omelette with mushrooms and bell peppers! This breakfast dish is fresh and flavorful.   • Ingredients For The Sauce
  • 1 cup mayonnaise
  • 2 tbsp sriracha sauce
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1/2 tsp salt
  • Ingredients For The Omelettes
  • 6 large eggs
  • 1/2 tbsp salt
  • 1 tbsp cornstarch
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped red bell peppers
  • 2 tbsp olive oil (to grease the frying pan)
  • 2 oz Sprouts for garnish
  • 1 tbsp Sesame seeds for garnish

In a medium mixing bowl combine chilled mayonnaise, lemon juice, and sriracha and whisk vigorously

Add in the salt and paprika and whisk again until thoroughly combined

Set the sauce in the refrigerator while making the omelettes so it’s nice and chilled when served

Combine all the eggs in a large mixing bowl and whisk vigorously

Add the salt and cornstarch and whisk again

Grease a medium frying pan and bring to a high heat

Pour 1/2 of egg mixture into the pan and reduce heat to medium, add 1/2 portion of bell peppers and mushrooms and cook for 3 minutes

Fold the omelette in half and cook for another 3 minutes per side and move to a plate

This recipe makes 2 medium omelettes or 4 small omelettes

Serve sauce on the side or drizzle on top
